Disappointing
Initially was disappointed with the book because no pictures of the recipes. Have only tried 2 of the recipes and both were heavy on salt and oil. Will try some other recipes but so far have not been impressed..

Found this in the back of my cookbook collection and started thumbing through it. The next three nights I was making recipes from it and my husband was saying, “Yeah, you can make that again.” The minestrone recipe is to die for. I’ve loved my Instant Pot since I got it (this is my third one) and now I love it even more! You have to have this book if you want recipes that are good, but won’t be leftovers for a week.

I’ve cooked a number of recipes from this so far and have enjoyed all of them very much. I did find that the cooking times for some of the breakfast dishes wasn’t quite right (I needed a bit longer to fully cook them, especially if they contained eggs) but that could be due to using an off brand pressure cooker (not an Instant Pot brand). Some of my favorites so far have been the barbecue chicken sandwiches with slaw (although my first two batches were a bit saucy but I fixed that by adding more chicken), beef stew, Italian tuna and bean salad, and the mini chocolate marble cheesecakes. I also like the “Use It Up” tips on many of the recipes that give you ideas on how to use up some of the ingredients like the extra cabbage from the slaw or the extra cherry tomatoes from the tuna and bean salad. The recipes are very simple and straight forward. Some obviously have more ingredients than others but even the most elaborate dishes are easy if you follow the recipe. I’ll be using this book quite a bit in the future and have already been inspired to play around with some of the recipes to suit my own palette. The introduction says that the recipes work with either a 3 or 6 quart model. I have been using a 6 quart cooker but so far, the dishes I’ve made could easily fit in a 3 quart one.
