Pour the olive oil into the Instant Pot and then hit Sauté and Adjust so it’s on the More or High setting. Allow it to heat up for 3 minutes, then add the onion, carrot, and diced celery. Sauté, stirring, for 5 minutes, then add the garlic and sauté for 1 minute longer.

Add the ground meat and sauté, stirring and scraping up any browned bits from the bottom, for 5 minutes, until it crumbles, releases its juices, and begins to brown. Don’t pour those juices out of the pot—they add a ton of delicious flavor.

Pour in the red and white wine and allow the meat and veggies to simmer in it for 10 solid minutes (don’t skimp on this step—it’s what cooks off the alcohol and helps the meat develop that rich flavor).

Stir in the crushed tomatoes, broth, seasoned salt, Italian seasoning, nutmeg, and reserved celery leaves. Pour in the pasta but do not stir, or you may have issues coming to pressure. Simply smooth the pasta down with a spoon so it’s just submerged in the broth (it’s okay if it sticks up a little).

Secure the lid, move the valve to the sealing position, hit Keep Warm/Cancel, then Manual or Pressure Cook on High Pressure for 6 minutes. Quick release when done.

Stir in the cream and the Boursin (or cream cheese) and let sit, stirring occasionally, for another minute or two until everything is totally combined. Serve topped with some Parmesan cheese, if desired.

    Very informative
    Extremely helpful book with easy simple explanations and good pictures. So glad to have found this cookbook as I have no experience with pressure cookers and was quite nervous beforehand. The book is well researched, uses ingredients most of us have in our kitchens and provides a good assortment of recipes covering everything from breakfast to desserts. I’m a soup fan so am pleased with so many choices.

    This book is amazing! Jeffrey’s fun personality and love for cooking comes through in every picture on every well thought out and laid out page.Easy to follow recipes and pictures for every step will have you using your instant pot and wondering what you were waiting for!! But just because the recipes are super user friendly (because of how well laid out they are), it doesn’t mean this book is for novice cooks only – it is indeed super user friendly and perfect for those new to the IP, but the variety of recipes available and the amazing outcomes it produces will also impress even the finiky-est of chefs and their luckiest of dining companions. It has something for everyone!A must for anyone who owns an instant pot / pressure cooker.

    This is an awesome recipe book for instant pot newbies like me! I’ve already made a few recipes from there and the food was delicious!!     Excellent for Everyone!
    I have been following Jeffery on YouTube for a long time. Of course I had to buy the two cookbooks to support him but when I got them I realized they are excellent! I love love love the pictures. They are great for beginners so they can follow step by step but they are also great for experienced people because the recipes are authentic. I’m Italian and I am proud to see his Italian dishes are excellent. Great job Jeffery!

    So far the recipes have been a little dissapointing
    It is a very well presented book and easy to follow. Unfortuatly I havent been blown away by the two recipes Ive tried so far. I made the asparagus risotto and it came out quite soupy. The orange beef (chicken option)was way to sweet with no balance to the flavour. I will continue to use the book but Im assuming most of the recipes will need a tweak. and it will be full of notes Im sure.

    Muy práctico y sencillo, las recetas paso a paso y con fotos lo hacen muy agradable.Lo único que no me gusta es que no hay homogeneidad en algunas medidas y otras son ambiguas, por ejemplo: “1 pack of taco seasoning” sería mejor que estuvieran las especias desglosadas.

    Great book, nice clear recipes with step by step instructions but in US measurements. Wish it has a conversion chart included. No need to do the whole book, but just a reference chart would go a long way.

    I have an instant pot for over a year and I was looking for some reliable cookbook and I start watching Jeffrey videos and doing some of the recipes and the result was just amazing so I decided to get his books and this one the first one the yellow one is just amazing everything you do turns out Delicious so last night I decided to cook the spinach soup and let me tell you it’s so delicious, so yes I recommend for every person that has an instant pot to get this book a try. It’s a game changer.
