Keto Crash Course

Let’s talk about one of my favorite topics in the whole world: keto! The ketogenic lifestyle, or keto (pronounced key-toe) diet, as it is commonly called, continues to grow in popularity across the United States and globally. Developed in the 1940s as a remedy for epileptic patients, the ketogenic diet became mainstream at the turn of the twenty-first century. In 2018, the attention centered on keto outshined any other popular diet/lifestyle, including the Paleo, Whole30, and Atkins diets. When compared to its rivals, a ketogenic diet is the optimal choice because it focuses on fueling the body with fat instead of glucose.

Get to Know Your Instant Pot

Whether your Instant Pot is still sitting in the box, collecting dust in a closet, or displayed proudly on your countertop, this chapter is going to teach you all the things you need to know to successfully cook your way through this cookbook. The Instant Pot has risen in popularity since its debut in 2010, becoming one of the most purchased and gifted kitchen items for Christmas in 2017. The ease of use, speedy cooking times, and ability to cook foods from frozen are just a sample of the numerous appealing characteristics of the Instant Pot. In other words, it’s for everybody!

Breaking Your Fast

Is it just me, or does breakfast food taste better after you’ve been awake for a few hours? I think breakfast foods should be celebrated during all hours of the day! In fact, if you intermittent fast, your first meal (when you break your fast) may be later in the afternoon or evening. Whenever you choose to break your fast, these sweet and savory recipes are sure to please. Each of these recipes is meal-prep friendly, too, so you can be well fed as your start your day!

Appetizers and Party Snacks

I am not someone who needs a holiday to throw a good party! Entertaining, cooking, and hosting my friends and family is my love language. Whether we’re rooting on our favorite football team (Go, VOLS!) or just spending an evening together, these recipes are always a hit. Plus who doesn’t love to eat leftover snacks for lunch the next day? Lose the slow cookers and free up space on your counter for more food at your next party—the Instant Pot is the real M.V.P.!

Soups, Stews, and Chilis

Put me in front of a fireplace with a good book and hot cup of soup and I am one happy girl! This chapter is chock-full of recipes that my family loves, and I know yours will too. One of the best, and probably most celebrated, functions of the Instant Pot is its ability to make soup taste like it’s been simmering all day in less time than it takes to run your dishwasher. Soups not only make great welcome-wagon meals, they also freeze and reheat fabulously. Don’t wait for cold weather to give one of these a go!

Covered Dishes

Casseroles are comfort food at its finest. One-pot meals mean less cleanup, and who doesn’t love that? Plus they are an easy way to sneak in fat and veggies to hit those macros. When my husband and I first got married, he refused to eat any kind of casserole. Now, my Spinach Artichoke Chicken Casserole (page 88) is one of his favorite meals! Using your Instant Pot to make casseroles is not as hard as it may seem. Two simple steps, and you’re on your way to a delicious, healthy, and satisfying meal. Your Instant Pot will give your oven a break and let you spend extra time with the ones you love!

Beef

Of all the animal proteins, beef is my absolute favorite. I love a juicy steak just as much as a meatloaf. Beef has so much flavor, especially when you purchase grassfed meat, and it is also an excellent food choice on a ketogenic diet. Beef is full of healthy fat and protein, which makes it ideal for meeting those macros. Use your Instant Pot as the perfect vessel for juicy, flavorful, and tender cuts of beef every time.

Poultry, Pork, and Seafood

Chicken, pork, and seafood may be lean sources of protein, but they’re fierce competitors for your Instant Pot! Though they’re lower in fat, chicken, pork, and seafood make excellent choices when following a ketogenic diet. With the right pairings, they can provide a plentiful amount of healthy fat and protein. This chapter is full of recipes that are foolproof for those times you need a break from red meat.

Side Dishes

Forget the turkey—at Thanksgiving, I’m all about the side dishes! With the Instant Pot, there’s no need to wait for November to roll around. In this chapter, several Southern classics get a keto makeover, including my favorite, Southern “Corn Bread” Dressing (page 166). It’s a secret family recipe, though, so shhh, don’t tell anyone! Side dishes and vegetables are also a great way to sneak in extra fat when needed. Using a steamer basket or small casserole dish in your Instant Pot will make your veggies taste like they’ve been slow cooking all day!

Desserts

Dessert. Must I really say more? I was born with a major affinity for the sweeter things in life, specifically crème brûlée. When I first received my Instant Pot, I was amazed that I could use it to make dessert! Following a ketogenic diet hasn’t stopped me from enjoying a keto-friendly sweet treat on occasion . . . okay . . . on the regular. The recipes in this chapter will make you feel indulgent without blowing your macros out of the water. So go ahead, have the extra bite!

    Awesome
This book is truly a keto book with awesome recipes! The author includes all the calorie/carb/macro info for each recipe; she did a fantastic job putting this book together. She provides neat little tips and suggestions for each recipe and many beautiful photos are included. It’s incredibly thorough and I’d recommend it for anybody struggling with ketogenic diet recipes. I really hope she writes another Instant Pot recipe book!

Too much text and uncommon ingredients
There’s waaay too much unnecessary filler in this book. Every recipe starts with a paragraph of text where the author felt it necessary to tell us their person experience with the recipe like how they found it, why they like it, where it comes from, the life story of the man who discovered the shallot, etc.The whole reason why I wanted a cook book rather than looking at FREE recipes online is that websites bombard you with pages and pages of why your family is going to loooove the food and other nonsense just to get to the actual recipe, which is about a 16th of the whole article. This book suffers from the same issue only this time you have to pay for it.Every recipe has at least 2 ingredients that you won’t find in a typical kitchen, it forces you to buy ingredients that you’ll use once for 1 recipe and it’ll then live in your fridge or pantry till it goes bad.None of these recipes are actually keto, they all have some ingredient that is not keto friendly. All in all this book not for the average home cook and its not for people doing keto, you’re better off looking at a recipe online if you can bare scrolling past the novel before the actual recipe.I gave it 2 stars cuz the pictures are nice.

I have had to return this book. Although it looks good, it’s for using a pressure cooker. I have to admit I thought this was a one pot recipe book. Arrived very quickly.

I love this book. It has changed my Keto thinking on cooking meals.THIS IS A KETO DIET BOOK!!!After going thru the book again I only found the Enchilada Casserole at 23 carbs and 10.8 net carbs. But did you see the picture? It is REALLY thick! Also the Maple Bourbon Salmon is 15.7 carbs and 4.3 net carbs. The one I thought was high is Sweet Country Carrots at 24.5 carbs but 7.2 net carbs. And those were the only high carbs for Keto I could find.So like anything else, you pick what works for you.I made the Broccoli Cheddar Soup and I will never make it on the stove again. It was great and fast. Many recipes are bookmarked in this book.I will for sure try the Classic Cheesecake. It is something I have never tried on Keto before.I love the variety in this book. The book is made well. It has lots of pictures and thick paper. If this author writes another Keto book, I will be interested.

I brought this book in error thinking it was a one pot cookbook but not a instant pot (basically it’s an electric pressure cooker such as a Pressure King Pro available on Amazon). I take the nutritional facts in the book with a huge pinch of salt. I’ve checked a few against a diabetic carbs and cals book and they’re off. I’m not sure the author is an expert on ketosis reading the forward. I have much better keto books based on science. However the recipes shown are tasty and the book is well illustrated with colour pictures. Some recipes I have removed or substituted ingredients to suit my diet. It won’t be my go-to cookbook but I will still use it. A good compliment to my pressure king pro

In a word….AMAZING. This book is simple to use and contains some of the most delicious meals (Keto or otherwise). I will absolutely stand behind Anna’s title of “Family-Friendly” as well. I bought this book just to try it out, didn’t even own an instant pot. By the second week I purchased one and haven’t looked back. My entire family (including 3 children under 6years old) have eaten everything I’ve made and loved it. Do yourself a favor and get a copy if you need some extra time and sanity in your life. We have loved all the recipes, but so far the reigning champs are the cauliflower chowder (tastes like a restaurant quality potato soup!) and the brownies. Thank you Anna for creating this!
