This 7.5 Quart enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. Lodge Color Porcelain Enamel on Cast Iron cookware is cast from molten iron in individual sand molds. The porcelain surface eliminates the need to season cast iron. The cast iron vessel has superior heat distribution and retention, evenly heating bottom sidewalls and even the lid. Tightly fitting lid seals in moisture. The excellent heat retention reduces the amount of energy needed for cooking. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean. Stainless steel lid knob is oven safe to 500 degrees Fahrenheit. The black rim on the pot is matte porcelain, not exposed cast iron. Hygienic porcelain enamel is non-reactive with food. Although dishwasher safe, hand washing with warm soapy water is recommended to preserve the cookware’s original appearance. Made in China.

WHAT IS PORCELAIN ENAMEL ON CAST IRON? It is glass that becomes bonded to the cast iron at high temperatures. A particulate of glass, called frit, is applied to the cast iron vessel and then baked at temperatures between 1200 and 1400° F. The glass frit melts and fuses to the cast iron, forming a bond. Porcelain enamel on cast iron is heat tolerant and impervious to water and other consumables.
EASY TO COOK AND CLEAN: The porcelain enameled interior has a smooth finish that minimizes sticking, promotes caramelization and resists staining. Although enameled cast iron is dishwasher safe, hand washing with warm soapy water and a nylon scrub brush is recommended to keep your Dutch Oven in tip top shape!

My favorite pot
I use this Dutch oven for cooking practically everything. I bought the 7.5 quart so I can make up meals for large family groups or for small groups. It cleans up easy and cooks evenly. It works well as an roaster, sauté pan, soup pot, stew pot. The pot heats up evenly, holds the heat and allows the food to soak up the heat and cook evenly and slowly tenderizing meats perfectly. This is the best purchase I have made for my kitchen.

Rusted On the First Use
I wanted a dutch oven that would last. I picked Lodge because I’d read such great things about their cast iron pans and I liked the idea of this long-standing American foundry producing something I’d be using every week.I put aside the fact that they don’t actually make their enameled cast iron in Tennessee, but in China. They go to great lengths to explain how carefully they monitor the manufacturing process to make sure that it adheres to their standards.When it arrived, I used my new dutch oven to braise some cabbage and sausages. It cooked well. It looked good. And it was really big so it could hold a lot.But, by the time the food was cool enough to put the leftovers away, the inside rim of the lid had rusted. Never mind that it stained the enamel on the base. What kind of an oven rusts that quickly?Their customer service person explained that I should have wiped the inside rims of the top and bottom with oil before cooking, but conceded that they give no instruction to do that with the packaging.I’ve used other enameled cast iron — from cheap brands without a reputation — and they didn’t rust. Brands like Le Creuset and Staub use a clear, matte enamel on the edges to protect them from rust. And that may be what Lodge did for the edge of the bottom of the vessel, too, since it didn’t pick up the rust from the lid.I asked if this were their intended design or a defect, but after that first reply, they stopped communicating.So my recommendation is either to spring for a more expensive and more reliable product or buy something much cheaper with the expectation that it may give you this sort of trouble.

I made a large beef stew in the oven, it was so heavy that it bowed the wire oven rack but after 3 hours at 325 degrees it was the best I’ve ever had. Women beware it’s very heavy when filled to the brim. Great product!!
