This is a brand that I have grown to trust and, right off the bat, I can say I trust. Right away the striking green colour of the wood handle caught my eye. The images on the computer do not do it justice. I am partial to green anyway so the deep grey-green and black handle of this knife instantly made it a favourite.Colour aside, I am one to love an item more for its functionality than for its looks and this knife has it all. It is relatively light weight, which took me aback at first, but the I find that the balance in the knife is to my liking and I can use it for long periods of time without feeling any fatigue in my wrist and arm. Also, the light weight allows it to be easily manipulated whether you are carving melons, or cutting around gristle, or peeling an apple, etc. I have never heard of Pakkawood before but I am certainly familiar with the process of creating an engineered wood and resin composite. One of the biggest properties of this process is creating a very durable final product.I do have other knives that look like this one and are said to be “Damascus” steel, so I have no evidence to not believe that this one is what it says it is too.I have used this blade regularly since it arrived and it has proven time and again that I can trust it to cut cleanly and precisely. The best test, in my books, of a knife is to see how thinly it can cut a ripe tomato. This knife cut tomato slices that were actually opaque they were so thin! I do recommend it and it would make a lovely gift for the chef in your life.In the event that experiences change or evolve, updates may be made to this review to address such developments.

    Keep your fingers out of the way – it’s razor sharp!
    The HexClad 5” Utility Knife certainly knows how to impress. It comes well packaged in a magnetic closure box complete with care instructions, polishing cloth, plastic sheath, and celebrity chef Gordon Ramsey endorsement card.Anyone who has watched any of Gordon Ramsey’s television shows over the years has heard him utter not only the statement on the card insert “A chef is only as good as his knives” but also and more importantly “let your knives do the work for you” and this knife sure does!The knife is light and well balanced and the Pakkawood handle feels really good in your hand.On my very first use cutting green pepper the knife cut the pepper so smoothly and effortlessly that it took me by surprise, clearly the knives I have been using are not as sharp as they claim to be, in fact it went so smooth and quickly that I did not get my fingers out of the way quick enough and just slightly grazed one. This resulted in a cut on my finger so fine and thin I didn’t even know I had cut myself until later. As I said in my title – it is razor sharp. I have since cut many fruits and vegetables with this knife and it has made short work out of all of them – what a difference from my other knives.In a review of another HexClad product I had stated that the price might be a road block to me purchasing their products but the more I use them the more I am changing my mind. I have always been of modest means but I have never been bothered by saving up my money to spend more on a product if the quality of that product warrants the price. I can say that from what I have seen from HexClad so far including this knife their products do live up to the heftier price tags. This is a fantastic knife, I love using it, and have no problem recommending it if you are thinking of purchasing it.
